Ingredients

  • 250 grams lean ground chicken
  • 100 grams shiitake mushrooms
  • 2 pieces scallions
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger
  • 1 clove garlic
  • 20 pieces wonton wrappers
  • 0.5 teaspoon freshly ground black pepper
  • 0 for sealing water

Directions

Step 1

Begin by mincing the garlic and ginger finely. Chop the shiitake mushrooms and scallions into small pieces.

Step 2

In a large bowl, combine the ground chicken, chopped shiitake mushrooms, minced garlic and ginger, sliced scallions, low-sodium soy sauce, sesame oil, and freshly ground black pepper. Mix thoroughly until the ingredients are well-incorporated.

Step 3

Lay out the wonton wrappers on a clean surface. Prepare a small bowl of water for sealing the dumplings.

Step 4

Place about 1 tablespoon of the chicken mixture into the center of each wonton wrapper. Gather the edges of the wrapper around the filling to form a 'cup' shape, leaving the top exposed.

Step 5

Dip your finger in the water and run it along the edges of the wrapper to help seal the dumpling tightly around the filling.

Step 6

Repeat the process with all the wrappers until all the filling is used.

Step 7

Prepare a steamer by lining it with parchment paper or cabbage leaves to prevent sticking. Arrange the siu mai in the steamer basket, making sure they do not touch each other.

Step 8

Steam the dumplings over simmering water for about 15-20 minutes, or until the chicken is cooked through.

Step 9

Serve the siu mai warm, optionally garnished with additional scallions and served with a side of low-sodium soy sauce for dipping.
