Ingredients

  • 500 grams baby potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium yellow bell pepper
  • 1 medium onion
  • 3 units garlic cloves
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 100 grams fresh spinach
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash the baby potatoes thoroughly and cut them into halves. If they are quite small, you can leave them whole.

Step 2

Fill a pot with water and bring it to a boil over medium-high heat. Add a pinch of salt.

Step 3

Add the halved baby potatoes to the boiling water and let them cook for about 10 minutes or until they are tender but still firm. Drain and set aside.

While the potatoes are cooking, slice the red, green, and yellow bell peppers into thin strips.

Peel and slice the onion into thin wedges, and mince the garlic cloves.
