Ingredients

  • 2 tablespoons Olive oil
  • 1 unit Medium onion, finely chopped
  • 2 units Garlic cloves, minced
  • 1.5 cups Arborio rice
  • 4 cups Low-sodium chicken or vegetable broth
  • 2 cups Water
  • 1 pound Medium shrimp, peeled and deveined
  • 2 cups Fresh spinach, chopped
  • 1 teaspoon Lemon zest, grated
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Grated Parmesan cheese

Directions

Step 1

In a large saucepan, heat the olive oil over medium heat.

Add the chopped onion and sauté until it becomes translucent, about 4-5 minutes.

Stir in the minced garlic and cook for another minute until fragrant.

Add the Arborio rice and stir well to coat the rice in the oil and onions, cooking for about 2 minutes.
