Ingredients

  • 0.5 head Red cabbage
  • 2 large Carrots
  • 1 Red bell pepper
  • 4 stalks Scallions
  • 0.5 cup Cilantro leaves
  • 0.25 cup Almonds
  • 3 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Thinly slice the green and red cabbage and place them in a large bowl.

Step 2

Peel the carrots and grate them using a box grater or food processor. Add them to the bowl with the cabbage.

Thinly slice the red bell pepper and scallions, and add them to the bowl.
