Ingredients

  • 1 pound lean ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 medium carrot, diced
  • 2 medium celery stalks, diced
  • 2 pieces garlic cloves, minced
  • 1 cup frozen peas
  • 1 cup low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 2 pounds sweet potatoes, peeled and cubed
  • 0.5 cup low-fat milk
  • 2 tablespoons unsalted butter
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large pot, bring water to a boil and add the cubed sweet potatoes. Cook until tender, about 15 minutes.

Step 3

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook until they start to soften, about 5 minutes.

Step 4

Add the minced garlic to the skillet and cook for another minute until fragrant.

Step 5

Add the lean ground turkey to the skillet and cook, breaking it up with a spatula, until browned, about 7 minutes.

Step 6

Stir in the tomato paste, Worcestershire sauce, fresh thyme, fresh rosemary, and black pepper. Mix to combine well.

Step 7

Pour in the low-sodium chicken broth and let the mixture simmer for 5 minutes. Add the frozen peas and stir to combine.

Step 8

Once the sweet potatoes are tender, drain and return them to the pot. Add the low-fat milk, unsalted butter, and salt. Mash until smooth and creamy.

Step 9

Spread the turkey mixture evenly in a baking dish. Top with the mashed sweet potatoes and spread them out to cover the meat mixture completely.

Step 10

Place the baking dish in the preheated oven and bake for 25 minutes, or until the top is slightly golden brown.

Step 11

Remove from the oven and let cool for a few minutes before serving. Enjoy your heart-healthy shepherd's pie!
