Ingredients

  • 4 large eggs
  • 2 egg whites
  • 4 slices turkey bacon
  • 1 medium sweet potato
  • 2 teaspoons extra virgin olive oil
  • 0.5 onion
  • 1 cup fresh spinach
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel and dice the sweet potato into small cubes.

Step 2

Heat 1 teaspoon of olive oil in a large non-stick skillet over medium heat.

Step 3

Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until tender and slightly crispy.

Step 4

While the sweet potatoes cook, chop the onion and fresh parsley.

Step 5

Remove the sweet potatoes from the skillet and set aside.
