Ingredients

  • 1 pound Lean ground beef (90% lean or higher)
  • 1 tablespoon Olive oil
  • 1 Large onion, chopped
  • 3 Garlic cloves, minced
  • 2 medium Carrots, sliced into rounds
  • 2 Celery stalks, chopped
  • 1 Red bell pepper, chopped
  • 2 cups Low-sodium beef broth
  • 1 can (14.5 ounces) Canned diced tomatoes, no salt added
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 Bay leaf

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.

Step 2

Add the minced garlic and cook for another 1-2 minutes until fragrant.

Step 3

Increase the heat to medium-high and add the lean ground beef. Cook, breaking it up with a wooden spoon, until it is browned and no longer pink. Drain any excess fat if necessary.

Step 4

Stir in the sliced carrots, chopped celery, and red bell pepper. Cook for 5-7 minutes until the vegetables start to soften.

Step 5

Add the low-sodium beef broth, diced tomatoes with their juices, tomato paste, dried oregano, dried basil, black pepper, and bay leaf. Stir well to combine.

Step 6

Bring the mixture to a simmer. Reduce the heat to low, cover the pot, and let cook for 30 minutes or until the vegetables are tender and flavors are well blended.

Step 7

Remove the bay leaf. Adjust seasoning if necessary.

Step 8

Garnish with fresh chopped parsley before serving.

Step 9

Pair with whole grain bread or brown rice for a complete heart-healthy meal.
