Ingredients

  • 2 cups whole wheat flour
  • 0.25 cup cold-pressed olive oil
  • 0.5 cup cold water
  • 1 lb lean ground turkey
  • 1 large onion
  • 3 garlic cloves
  • 2 cups fresh spinach
  • 2 tablespoons low sodium soy sauce
  • 0.5 cup low-fat feta cheese
  • 1 egg white
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0 cooking spray

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large bowl, combine 2 cups of whole wheat flour and 0.25 cup of cold-pressed olive oil. Mix until the mixture resembles coarse crumbs.

Step 3

Gradually add 0.5 cup of cold water, and stir with a fork until a dough starts to form. If the dough is too dry, add a little more water, one tablespoon at a time.

Step 4

Roll the dough into a ball, cover it with plastic wrap, and refrigerate for at least 15 minutes.

Step 5

Meanwhile, heat a non-stick pan over medium heat and spray lightly with cooking spray.

Step 6

Add 1 lb of lean ground turkey and cook for 5 minutes, breaking up the meat with a spatula, until browned.

Step 7

Chop 1 large onion and mince 3 garlic cloves. Add them to the turkey, and cook for another 5 minutes.

Step 8

Stir in 2 cups of fresh spinach, 2 tablespoons of low sodium soy sauce, 0.5 teaspoon of black pepper, 1 teaspoon of dried oregano, and 1 teaspoon of dried thyme. Cook until the spinach wilts.

Step 9

Remove the mixture from heat and let it cool slightly. Mix in 0.5 cup of low-fat feta cheese.

Step 10

Remove the dough from the refrigerator, and roll it out on a floured surface to about 1/8 inch (3 mm) thickness.

Step 11

Cut the dough into six 6-inch circles using a round cutter or a small bowl.

Step 12

Place a spoonful of the turkey mixture in the center of each dough circle.

Step 13

Fold the dough in half over the filling, and seal the edges by pressing with a fork.

Step 14

Transfer the pastries to a baking sheet lined with parchment paper.

Step 15

Beat 1 egg white and brush it lightly over the pastries.

Step 16

Bake the pastries in the preheated oven for 20-25 minutes or until golden brown.

Step 17

Allow to cool slightly before serving, and enjoy your heart-healthy savory meat pastry!
