Ingredients

  • 1 pound Fresh green beans, trimmed
  • 1 pound Red potatoes, diced
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Low-sodium vegetable broth
  • 1 tablespoon Lemon juice
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Fill a large pot with water and bring it to a boil over high heat. Add the diced potatoes and cook for 10 minutes, or until they are just tender. Drain and set aside.

In the same pot, bring more fresh water to a boil and blanch the green beans for 3-4 minutes until they are bright green and tender-crisp. Drain and immediately transfer the green beans to a bowl of ice water to stop the cooking process, then drain again and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.

Add the boiled potatoes and green beans to the skillet, stirring to coat them in the oil and garlic.
