Ingredients

  • 2 Whole wheat tortillas
  • 2 Large eggs
  • 0.5 cup Low-fat cheddar cheese, shredded
  • 1 cup Baby spinach
  • 0.5 cup Red bell pepper, diced
  • 0.5 Avocado, sliced
  • 1 teaspoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Preheat a non-stick skillet over medium heat.

Step 2

In a small bowl, whisk together the eggs, salt, and black pepper until well combined.

Step 3

Add the olive oil to the skillet and swirl to coat the bottom. Pour the eggs into the skillet and cook, stirring gently, until scrambled and just set. Remove from the skillet and set aside.

Step 4

Wipe the skillet clean and place one tortilla in the skillet over medium heat.

Step 5

Sprinkle half of the cheese evenly over the tortilla.

Step 6

Add the scrambled eggs, baby spinach, diced red bell pepper, and cilantro on top of the cheese layer.

Step 7

Place the remaining tortilla on top, and sprinkle with the remaining cheese. Press down gently with a spatula.

Step 8

Allow the quesadilla to cook for about 2-3 minutes, or until the bottom tortilla is golden brown. Carefully flip the quesadilla over and cook the other side for another 2-3 minutes, until golden and the cheese has melted.

Step 9

Remove the quesadilla from the skillet and let it sit for a minute to cool slightly. Cut the quesadilla into wedges with a sharp knife or a pizza cutter.

Step 10

Top the quesadilla wedges with sliced avocado before serving.
