Ingredients

  • 1 pound Lean beef flank steak
  • 4 cups Fresh spinach
  • 1 cup Low-fat mozzarella cheese
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Fresh basil leaves, chopped
  • 1 tablespoon Balsamic vinegar
  • 0.5 cup Low-sodium beef broth

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the flank steak on a clean surface. Use a meat mallet to gently pound it until it is about 1/4-inch thick.

Step 3

In a large skillet over medium heat, add 1 tablespoon of olive oil. Sauté the minced garlic until fragrant, about 1 minute.

Step 4

Add the fresh spinach to the skillet and cook until wilted, approximately 3-4 minutes. Remove from heat and let cool slightly.

Step 5

In a bowl, mix the wilted spinach with low-fat mozzarella cheese, chopped basil, salt, and black pepper.

Step 6

Spread the spinach and cheese mixture evenly over the flattened flank steak.

Step 7

Carefully roll the steak up tightly, starting from one of the short ends. Secure the roll with kitchen twine at 2-inch intervals.

Step 8

Heat the remaining tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the beef roll on all sides until browned, about 2-3 minutes per side.

Step 9

Add the balsamic vinegar and low-sodium beef broth to the skillet, then transfer the skillet to the preheated oven.

Step 10

Bake for 20-25 minutes or until the beef is cooked to your desired level of doneness.

Step 11

Remove from the oven and let the beef roll rest for 5 minutes before slicing into rounds.

Step 12

Serve warm, drizzled with any remaining sauce from the skillet.
