Ingredients

  • 250 grams Broccoli florets
  • 2 large Carrots
  • 2 medium Bell peppers
  • 1 large Red onion
  • 2 medium Zucchini
  • 200 grams Cherry tomatoes
  • 4 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash all the vegetables thoroughly. Cut the broccoli into smaller florets if needed, slice the carrots into thin rounds, core and slice the bell peppers into strips, peel and cut the red onion into wedges, and cut the zucchini into half-moons.

Step 3

Place the prepared vegetables, including the whole cherry tomatoes, into a large mixing bowl.

Step 4

Add the olive oil, garlic powder, dried oregano, dried basil, salt, and black pepper to the bowl. Toss the vegetables gently until they are evenly coated with the oil and spices.
