Ingredients

  • 8 oz Turkey sausage
  • 1 tbsp Olive oil
  • 8 Egg whites
  • 2 cups Spinach, fresh
  • 1 cup Tomatoes, diced
  • 0.5 cup Red onion, diced
  • 1 Avocado, sliced
  • 4 Whole-grain tortillas
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Low-fat cheese, shredded
  • 0.5 cup Salsa

Directions

Step 1

Preheat a non-stick skillet over medium heat and add olive oil.

Step 2

Add the turkey sausage to the skillet and cook for 5-7 minutes, crumbling it with a spatula until it is fully cooked and no longer pink. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, pour in the egg whites and season with salt and black pepper. Cook while stirring gently to scramble the eggs for 3-4 minutes or until they are set.
