Ingredients

  • 4 pieces Whole grain croissants
  • 4 pieces Lean turkey sausage patties
  • 8 large Egg whites
  • 4 slices Low-fat cheddar cheese slices
  • 1 tablespoon Olive oil
  • 1 cup Baby spinach
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 medium Tomato, sliced

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Place the turkey sausage patties on a baking tray and bake them in the oven for about 10-12 minutes, or until fully cooked. Flip halfway through to cook evenly.

Step 3

While the sausage is cooking, heat 1 tablespoon of olive oil in a non-stick pan over medium heat.

Step 4

Add the baby spinach to the pan and sauté for 2-3 minutes until wilted. Remove the spinach and set aside.

Step 5

In the same pan, add the egg whites and scramble them gently, seasoning with a pinch of salt and black pepper. Once cooked, remove from the heat.

Step 6

Slice each whole grain croissant horizontally, and place them open-faced on a baking sheet.

Step 7

On each bottom half, layer 1 piece of turkey sausage, scrambled egg whites, a slice of cheese, some wilted spinach, and a slice of tomato.

Step 8

Place the croissants back in the oven for an additional 3-4 minutes to melt the cheese slightly.

Step 9

Remove from the oven, assemble the top half of the croissant, and serve warm.
