Ingredients

  • 2 cups Unsweetened almond milk
  • 1 cup Coconut cream
  • 8 Medjool dates, pitted
  • 0.25 cup Pure maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Sea salt
  • 2 tablespoons Arrowroot powder
  • 2 tablespoons Chilled water

Directions

Step 1

Soak the pitted dates in warm water for about 10 minutes to soften them, then drain.

Step 2

In a blender, combine the soaked dates, almond milk, coconut cream, maple syrup, and vanilla extract. Blend until the mixture is smooth and creamy.

Step 3

In a small mixing bowl, whisk the arrowroot powder with 2 tablespoons of chilled water to form a slurry.

Step 4

Transfer the ice cream mixture from the blender to a medium saucepan and stir in the arrowroot slurry over medium heat.

Step 5

Cook the mixture, stirring continuously, until it thickens slightly and starts to bubble. This should take about 5 minutes.

Step 6

Remove the saucepan from the heat and stir in the sea salt.

Step 7

Allow the mixture to cool at room temperature, then place it in the refrigerator for at least 2 hours, or until it is thoroughly chilled.

Step 8

Once chilled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Step 9

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until it reaches the desired firmness.

Step 10

Scoop and serve garnished with a sprinkle of extra sea salt if desired.
