Ingredients

  • 1 sheet Whole grain puff pastry
  • 2 pieces Salmon fillet
  • 2 cups Fresh spinach
  • 1 tablespoon Olive oil
  • 1 medium, finely chopped Shallot
  • 2 cloves, minced Garlic
  • 4 tablespoons Low-fat cream cheese
  • 2 teaspoons Dijon mustard
  • 1 beaten Egg
  • 1 zested and juiced Lemon
  • 2 tablespoons, chopped Fresh dill
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Heat olive oil in a pan over medium heat. Add the shallot and garlic, cooking until softened but not browned, about 3 minutes.

Step 3

Add the spinach to the pan and cook until wilted, about 2 minutes. Remove from heat and let it cool slightly.

Step 4

In a mixing bowl, combine the cooked spinach, low-fat cream cheese, Dijon mustard, lemon zest and juice, dill, salt, and pepper. Stir until well combined.

Step 5

Unroll the puff pastry sheet on a floured surface. Cut the sheet in half to create two rectangles.

Place a salmon fillet in the center of each pastry rectangle. Spoon the spinach mixture evenly over each piece of salmon.
