  • 2 cups baby spinach
  • 1 medium avocado
  • 1 cup cherry tomatoes
  • 1 small cucumber
  • 0.25 cup toasted almonds

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Peel and cut the sweet potatoes into 1-inch cubes.

In a large bowl, toss the sweet potato cubes with 1 tablespoon of extra virgin olive oil, sea salt, and black pepper.
