Ingredients

  • 300 grams whole rye flour
  • 100 grams whole wheat flour
  • 200 grams cottage cheese
  • 250 milliliters warm water
  • 7 grams dry yeast
  • 1 teaspoon salt
  • 2 tablespoons honey
  • 1 tablespoon caraway seeds
  • 1 tablespoon olive oil

Directions

Step 1

In a large mixing bowl, combine the warm water, honey, and dry yeast. Stir them together and let the mixture sit for about 5 to 10 minutes until it's frothy.

Step 2

Add the cottage cheese, olive oil, and salt to the yeast mixture. Mix well using a spatula or a wooden spoon.

Step 3

Stir in the whole rye flour and whole wheat flour gradually into the mixture. Once all the flour is incorporated, add the caraway seeds and keep mixing until a rough dough forms.

Step 4

Knead the dough on a clean, lightly floured surface for about 8 to 10 minutes, until the dough is smooth and elastic.

Step 5

Place the kneaded dough into a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size.

Step 6

After the first rise, punch down the dough gently to deflate it, then shape it into a round or loaf shape as desired.

Step 7

Transfer the dough onto a baking tray lined with parchment paper, cover again, and let it rise for another 30 minutes.

Step 8

Preheat your oven to 400°F (200°C) during the final rise.

Step 9

Bake the bread in the preheated oven for 30 to 35 minutes or until the bread sounds hollow when tapped on the bottom.

Step 10

Remove the bread from the oven and let it cool on a wire rack before slicing and serving.
