In a medium saucepan, bring the vegetable broth to a gentle simmer.
In a large skillet over medium heat, warm 1 tablespoon of olive oil. Add the finely chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional 1 minute.
Add the brown rice to the skillet, stirring to coat the grains in oil, onion, and garlic for about 2 minutes.
