  • 1 cup brown rice
  • 2 cups water

  • 1 medium red bell pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt
  • 2 cups spinach
  • 0.25 cup fresh parsley

Directions

Step 1

Rinse the brown rice under cold water until the water runs clear to remove any excess starch.

In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed brown rice, reduce the heat to low, cover, and simmer for about 30-35 minutes or until the rice is tender and the water has been absorbed.

While the rice is cooking, prepare the tomato sauce. Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat.
