  • 1 cup frozen peas
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 0.5 teaspoon black pepper
  • 0.25 cup, chopped fresh cilantro
  • 0.5 cup low-fat plain yogurt
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Rinse the brown rice under cold water until the water runs clear.

Step 2

In a medium pot, bring the vegetable broth to a boil over high heat.

Add the brown rice, reduce the heat to low, cover, and simmer for 30 minutes, or until the rice is tender and the liquid is absorbed. Set aside.
