  • 400 grams Whole grain rechta noodles
  • 2 tablespoons Olive oil
  • 400 grams Boneless, skinless chicken breast
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 large Carrot, diced
  • 1 medium Zucchini, diced
  • 1 medium Red bell pepper, diced
  • 2 tablespoons Tomato paste
  • 500 milliliters Low-sodium chicken broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric
  • 0.25 teaspoon Cayenne pepper
  • 1 whole Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Chopped fresh parsley

Directions

Step 1

Cook the whole grain rechta noodles according to package instructions, rinse under cold water, and set aside.

In a large pot or Dutch oven, heat olive oil over medium heat.

Add the chopped onion and sauté for 3-4 minutes until translucent.

Add minced garlic and sauté for another minute until fragrant.
