  • 4 medium Russet potatoes
  • 2 tablespoons Olive oil
  • 1 cup Quinoa
  • 2 cups Low-sodium vegetable broth
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Fresh chives, chopped
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Whole wheat breadcrumbs
  • 0.5 cup Non-fat Greek yogurt
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel and chop the potatoes into chunks. Boil in a large pot of water until tender, about 15 minutes. Drain and set aside.

Step 3

While the potatoes are boiling, rinse the quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the broth is absorbed.
