Ingredients

  • 2 pounds Yukon Gold potatoes
  • 2 cloves Garlic
  • 2 tablespoons Extra virgin olive oil
  • 0.5 cups Low-fat milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Freshly ground black pepper
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Peel and quarter the Yukon Gold potatoes, ensuring they are of uniform size for even cooking.

Step 2

Place the potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.

Step 3

Peel the garlic cloves and add them whole to the pot with the potatoes.

Step 4

Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to a gentle simmer and cook until the potatoes are fork-tender, about 20 minutes.

Step 5

Drain the potatoes and garlic in a colander and return them to the pot.

Step 6

Add 2 tablespoons of extra virgin olive oil to the potatoes.

Step 7

Start mashing the potatoes and garlic together using a potato masher or fork.

Step 8

Slowly pour in the low-fat milk while continuing to mash, adding just enough milk to reach your desired consistency.

Step 9

Season the mashed potatoes with additional salt and freshly ground black pepper to taste.

Step 10

Gently fold in the chopped fresh parsley to add a burst of fresh flavor and color.

Step 11

Serve hot as a side dish, garnished with a sprig of parsley if desired.
