Ingredients

  • 1 pound Chicken breast, skinless
  • 8 ounces Brown rice noodles
  • 1 large Yellow onion
  • 3 inches Ginger root
  • 8 cups Low-sodium chicken broth
  • 1 whole Cinnamon stick
  • 2 whole Star anise
  • 4 whole Cloves
  • 2 tablespoons Fish sauce, low-sodium
  • 1 whole Lime
  • 0.5 cup Fresh cilantro
  • 0.5 cup Fresh basil
  • 4 whole Green onions
  • 1 cup Bean sprouts
  • 1 whole Jalapeño pepper
  • 0 to taste Salt (optional)
  • 0 to taste Pepper

Directions

Step 1

1. Preheat your oven's broiler. Slice the onion in half and slice the ginger root into thin slices. Place them on a baking sheet and broil for about 5 minutes until they are slightly charred.

Step 2

2. In a large pot, combine the charred onion and ginger with the chicken broth, cinnamon stick, star anise, and cloves. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 30 minutes.

Step 3

3. While the broth is simmering, bring a separate pot of water to a boil. Cook the brown rice noodles according to the package instructions until they are al dente. Drain and rinse them under cold water to prevent sticking. Set aside.

Step 4

4. After the broth has simmered for 30 minutes, add the chicken breast to the pot. Simmer for an additional 20 minutes until the chicken is cooked through.

Step 5

5. Remove the chicken from the broth and let it cool slightly. Shred the chicken into thin strips using two forks.

Step 6

6. Strain the broth into a clean pot to remove the solids (spices, onion, and ginger). Return the strained broth to low heat and add the fish sauce. Adjust seasoning with salt and pepper, if desired.

Step 7

7. To serve, divide the cooked rice noodles into serving bowls. Top with shredded chicken. Ladle the hot broth over the chicken and noodles.

Step 8

8. Garnish with cilantro, basil, and green onions. Serve with bean sprouts, sliced jalapeño, and lime wedges on the side for customization.
