Ingredients

  • 2 cups Short-grain brown rice
  • 2.5 cups Water
  • 1.5 tablespoons Rice vinegar
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt

Directions

Step 1

Rinse the short-grain brown rice thoroughly under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, combine the rinsed brown rice and water. Allow the rice to soak in the water for at least 30 minutes to help soften the grains.

Step 3

After soaking, bring the rice to a boil over high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer gently for 30-35 minutes, or until the rice is tender and all the water is absorbed.

Step 4

While the rice is cooking, prepare the seasoning mixture. In a small saucepan, combine rice vinegar, sugar, and salt. Warm the mixture over low heat until the sugar and salt are fully dissolved, but do not let it boil.

Step 5

Once the rice is fully cooked, remove it from the heat, and let it stand, covered, for 10 minutes to finish steaming.

Step 6

Transfer the cooked rice to a large wooden or non-reactive bowl. Gently fold the warm vinegar mixture into the rice using a paddle or wooden spoon. Be careful not to smash the rice grains. This step should be done in a slicing or folding motion.

Step 7

Allow the seasoned sushi rice to cool to room temperature before using it to make sushi rolls or other dishes.

Step 8

Enjoy your heart-healthy sushi rice with a variety of fillings and toppings of your choice.
