  • 2 cups Baby spinach
  • 2 cloves Garlic, minced
  • 1 cup Low-sodium vegetable broth
  • 1 cup Low-fat milk
  • 2 tablespoons Whole-wheat flour
  • 1 cup Reduced-fat cheddar cheese, shredded
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Freshly cracked black pepper
  • 0.25 teaspoon Salt
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Bring a large pot of water to a boil and cook the whole wheat penne pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
