  • 2 tablespoons Fresh parsley
  • 250 grams Cherry tomatoes
  • 0.5 medium Red onion
  • 1 tablespoon Lemon juice
  • 1 teaspoon Tabasco sauce
  • 3 tablespoons Aquafaba
  • 100 milliliters Low-sodium vegetable broth

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Wash and cut the red potatoes into bite-sized cubes. Ensure they are all roughly the same size to cook evenly.

In a large mixing bowl, combine the potatoes with 1 tablespoon of olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper. Toss until the potatoes are evenly coated.
