Ingredients

  • 8 ounces Whole grain pasta
  • 3 cups Broccoli florets
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 0.25 teaspoon Red pepper flakes
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Grated parmesan cheese (optional)
  • 0.5 teaspoon Black pepper

Directions

Step 1

Bring a large pot of water to a boil, then add the whole grain pasta. Cook according to the package instructions until al dente, about 8 to 10 minutes. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, steam the broccoli florets until they are bright green and tender, about 3 to 5 minutes.

Step 3

In a large pan over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes, cooking for 1 minute until fragrant.

Step 4

Add the steamed broccoli to the pan, then stir in the lemon juice and lemon zest. Cook for an additional 2 minutes, ensuring the broccoli is well-coated with the flavors.

Step 5

Add the cooked pasta to the pan along with the reserved pasta water. Toss everything together to combine, letting the pasta absorb the flavors.

Step 6

Stir in the chopped parsley and season with black pepper to taste.

Step 7

Optionally, sprinkle grated parmesan cheese over the pasta before serving.

Step 8

Serve warm, and enjoy your heart-healthy pasta with a light salad on the side.
