Ingredients

  • 500 grams lean turkey sausage
  • 500 grams whole grain puff pastry
  • 1 medium onion
  • 2 units garlic cloves
  • 2 tablespoons fresh parsley
  • 1 tablespoon low-sodium soy sauce
  • 1 large egg
  • 0.5 teaspoon black pepper
  • 0 olive oil spray

Directions

Step 1

Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.

Step 2

Peel and finely chop the onion and garlic cloves.

Step 3

In a non-stick pan, spray a little olive oil and sauté the onion and garlic over medium heat until soft, about 5 minutes.

Step 4

In a large bowl, combine the turkey sausage, sautéed onion and garlic, chopped parsley, soy sauce, and black pepper. Mix well to combine.

Step 5

Beat the egg in a small bowl and set aside.

Step 6

Roll out the whole grain puff pastry on a lightly floured surface until it's about 1/8-inch thick.

Cut the pastry into two long rectangles approximately 15cm wide.

Place half of the sausage mixture along the length of one pastry strip, leaving about 1cm at the edges. Roll the pastry over the filling to enclose it.

Step 9

Brush the joining edge with a little beaten egg to seal, then trim any excess pastry if necessary.

Step 10

Repeat with the second pastry strip and remaining sausage mixture.

Step 11

Cut each roll into 10 mini sausage rolls.

Step 12

Place the sausage rolls on the prepared baking sheet, sealing side down, and brush the tops with the remaining beaten egg.

Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and cooked through.
