Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons extra-virgin olive oil
  • 1 cup whole wheat breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt
  • 2 units egg white
  • 1 cup low-sodium marinara sauce
  • 0.5 cup part-skim mozzarella cheese, shredded

Directions

Step 1

Preheat your oven to 400°F (200°C). Lightly grease a baking dish with 1 tablespoon of extra-virgin olive oil.

Step 2

Place chicken breasts between two sheets of plastic wrap and pound them gently with a meat mallet to an even thickness, about 1/2 inch thick.

Step 3

In a shallow bowl, mix together the whole wheat breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, black pepper, and salt.
