Ingredients

  • 400 grams Dried black-eyed peas
  • 2 large Red bell peppers
  • 1 large Onions
  • 60 milliliters Olive oil
  • 1 tablespoon Fresh ginger
  • 2 Garlic cloves
  • 500 milliliters Low-sodium vegetable broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Thyme, dried
  • 3 Egg whites
  • 1 cup Spinach, fresh and chopped
  • 1 teaspoon Salt
  • 0 Banana leaves or parchment paper

Directions

Step 1

Soak the black-eyed peas in a large bowl of water for 1-2 hours. This will help in removing the skin easily.

Step 2

To peel the beans, rub them between your palms to release the skins, and rinse under running water until most skins are removed.

Step 3

Blend the peeled beans, red bell peppers, onion, garlic, and ginger in a blender with a little vegetable broth until smooth. Add more broth as necessary to achieve a creamy consistency.

Transfer the blended mixture into a large mixing bowl.

Stir in the olive oil, tomato paste, smoked paprika, cayenne pepper, thyme, salt, and remaining vegetable broth into the bean mixture until well combined.

Add the egg whites and chopped spinach, stirring gently until evenly incorporated.
