Ingredients

  • 250 grams lean turkey sausage
  • 250 grams whole wheat puff pastry
  • 0.5 whole red onion
  • 2 cloves garlic
  • 1 tablespoon fresh thyme
  • 1 whole egg
  • 1 tablespoon skimmed milk
  • 0.5 teaspoon black pepper
  • 1 teaspoon olive oil

Directions

Step 1

Preheat the oven to 200°C (392°F) and line a baking sheet with parchment paper.

Step 2

Finely dice the red onion and mince the garlic.

Step 3

Heat olive oil in a pan over medium heat and sauté the onion and garlic until softened, about 3-4 minutes. Set aside to cool.

Step 4

In a medium bowl, combine the turkey sausage, sautéed onion mixture, fresh thyme, and black pepper. Mix well to combine.

Step 5

Roll out the whole wheat puff pastry on a lightly floured surface to a thickness of about 3mm.

Step 6

Cut the pastry into rectangles approximately 10cm x 6cm.

Place a spoonful of the sausage mixture onto one end of each rectangle and roll up to enclose the filling, sealing the edges with a little water.
