Ingredients

  • 8 leaves Romaine lettuce leaves
  • 1 cup Quinoa, cooked
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.25 cup Red onion, finely chopped
  • 0.25 cup Kalamata olives, sliced
  • 0.5 cup Feta cheese, crumbled
  • 1 cup Chickpeas, canned, rinsed and drained
  • 0.25 cup Fresh parsley, chopped
  • 2 tablespoons Lemon juice
  • 2 tablespoons Extra-virgin olive oil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

1. Rinse and thoroughly dry the romaine lettuce leaves, setting them aside for later use as wraps.

Step 2

2. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, kalamata olives, and chickpeas. Toss gently to mix the ingredients evenly.
