Ingredients

  • 200 grams lean lamb leg steak
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 4 slices whole grain bread
  • 1 cup spinach leaves
  • 1 large tomatoes
  • 0.5 cup cucumber
  • 0.25 cup tzatziki sauce
  • 0.25 cup red onion
  • 0.25 cup feta cheese, reduced-fat
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt

Directions

Step 1

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

Step 2

Place the lamb leg steak in a shallow dish. Pour the marinade over the lamb, ensuring it is well-coated. Let it marinate for at least 15 minutes while you prepare the other ingredients.

Step 3

Preheat a grill pan or non-stick skillet over medium-high heat.

Step 4

Grill or pan-sear the lamb steak for about 4-5 minutes per side until the internal temperature reaches 145°F (63°C) for medium-rare. Remove from heat and allow it to rest for 5 minutes before slicing thinly against the grain.

Step 5

Toast the whole grain bread slices to your desired level of crispness.

Step 6

Layer spinach leaves on two slices of toasted bread. Add sliced tomatoes, cucumber slices, and red onion.

Step 7

Top with sliced grilled lamb, crumbled feta cheese, and a generous dollop of tzatziki sauce.

Step 8

Place the remaining slices of bread on top to complete the sandwiches.

Step 9

Cut each sandwich in half and serve immediately. Enjoy your heart-healthy Mediterranean lamb sandwich, full of flavor and nutrition!
