Ingredients

  • 1 cup whole wheat couscous
  • 1.25 cups water
  • 2 tablespoons extra virgin olive oil

  • 2 cloves garlic
  • 1 cup cherry tomatoes
  • 1 medium English cucumber
  • 0.5 cup kalamata olives
  • 0.25 cup red onion
  • 0.5 cup fresh parsley
  • 0.5 cup feta cheese
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Bring the water to a boil in a medium saucepan. Remove from heat and stir in the whole wheat couscous. Cover and let it sit for 5-10 minutes, until the couscous has absorbed all the water.

Fluff the couscous with a fork and let it cool to room temperature.
