Ingredients

  • 500 grams ground turkey
  • 75 grams bulgur wheat
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 4 cloves minced garlic
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 0.5 cup fresh parsley
  • 3 tablespoons pine nuts
  • 1 medium finely chopped onions

Directions

Step 1

Rinse the bulgur wheat under cold water and soak it in a small bowl with warm water for about 15 minutes. Drain any excess water and set aside.

Step 2

In a large bowl, combine the ground turkey with the soaked bulgur, coriander, cumin, cinnamon, allspice, black pepper, and sea salt.

Step 3

Add the minced garlic, finely chopped onions, and fresh parsley to the mixture and combine thoroughly using your hands.

Step 4

Shape the mixture into small sausage shapes or rounds, about 2 inches long and 1 inch thick.

Step 5

In a large skillet, heat the olive oil over medium heat. Add the formed sausages to the pan, leaving space between each sausage.

Step 6

Cook gently for 10-12 minutes, turning occasionally, until the sausages are evenly browned and cooked through.

Step 7

Once cooked, add the lemon juice and pine nuts to the skillet and stir gently, allowing the nuts to toast slightly for an additional 2-3 minutes.

Step 8

Serve the heart-healthy makanek hot, garnished with extra chopped parsley and a squeeze of fresh lemon juice if desired.
