Ingredients

  • 8 ounces whole-grain elbow macaroni
  • 2 cups low-sodium chicken broth

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces smoked turkey sausage, sliced
  • 2 cups baby spinach
  • 2 tablespoons whole wheat flour
  • 2 teaspoons Dijon mustard
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Bring a large pot of water to a boil. Cook the whole-grain elbow macaroni according to package instructions until al dente. Drain and set aside.

Step 2

In a large sauté pan, heat olive oil over medium heat. Add diced onion and garlic; cook until the onion is soft and translucent, about 5 minutes.

Step 3

Add the sliced turkey sausage to the pan, and cook until browned, about 5 minutes. Stir in the baby spinach and cook until wilted. Remove mixture from the pan and set aside.
