Ingredients

  • 200 grams beef bone marrow
  • 2 tablespoons olive oil
  • 2 medium, finely chopped shallots
  • 2 minced garlic cloves
  • 1.5 cups low sodium beef stock
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon, chopped fresh thyme
  • 0.5 teaspoon, freshly ground black pepper
  • 0.5 teaspoon lemon zest
  • 1 tablespoon, chopped fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the beef marrow bones on a baking sheet lined with parchment paper. Roast in the preheated oven for 15-20 minutes, or until the marrow is soft and starting to separate from the bone.

Step 3

Once done, remove the bones from the oven and let cool slightly.

Step 4

In a saucepan, heat olive oil over medium heat. Add the chopped shallots and minced garlic and sauté until they are translucent, about 3-4 minutes.

Scoop the marrow out from the bones and add it to the saucepan with the shallots and garlic. Stir well to combine.

Step 6

Pour in the low sodium beef stock and balsamic vinegar. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer.

Add chopped thyme and freshly ground black pepper to the sauce, and continue to simmer for about 25 minutes, stirring occasionally. The sauce should reduce and thicken.

Step 8

Once the sauce has reached the desired consistency, remove it from the heat and stir in the lemon zest and fresh parsley for a bright finish.

Taste and adjust seasoning if necessary. Serve immediately over lean meats or roasted vegetables for a heart-healthy indulgence.
