Ingredients

  • 30 pieces Whole wheat wonton wrappers
  • 300 g Lobster meat
  • 100 g Low-fat ricotta cheese

  • 1 piece Garlic clove, minced
  • 2 tbsp Fresh basil, chopped
  • 2 tbsp Olive oil
  • 100 g Fresh spinach, chopped
  • 240 ml Low-sodium chicken broth
  • 0.25 tsp Black pepper
  • 0.25 tsp Salt
  • 20 g Parmesan cheese, grated

Directions

Step 1

Start by preparing the lobster filling: In a medium-sized bowl, combine the lobster meat (finely chopped), low-fat ricotta cheese, lemon zest, minced garlic, and chopped basil. Mix well.

Step 2

Season the lobster mixture with black pepper and a pinch of salt. Stir until all ingredients are well incorporated.

Place a wonton wrapper on a clean surface, and add 1 teaspoon of the lobster filling in the center. Brush the edges of the wrapper with a little water.
