Ingredients

  • 4 Large Russet potatoes
  • 2 teaspoons Olive oil
  • 1 cup Fat-free Greek yogurt
  • 0.5 cup Chopped green onions
  • 0.75 cup Shredded reduced-fat cheddar cheese
  • 4 slices Turkey bacon
  • 0.25 teaspoon Freshly ground black pepper
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Paprika
  • 2 tablespoons Chopped fresh parsley (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Thoroughly wash and scrub the potatoes to remove any dirt, then dry them with a clean kitchen towel.

Step 3

Using a fork, poke holes all around each potato to allow steam to escape during baking.

Step 4

Rub each potato with olive oil and place them directly on the oven rack. Bake for 50 to 60 minutes, or until the potatoes are tender and can be easily pierced with a fork.

Step 5

While the potatoes are baking, cook the turkey bacon in a non-stick skillet over medium heat until crispy. Remove from heat, let cool slightly, then crumble into small pieces.

Step 6

Once the potatoes are done, remove them from the oven and place on a cutting board. Let them cool for 5 minutes.

Step 7

Carefully slice each potato lengthwise to create an opening, being cautious not to cut all the way through the potato.

Step 8

Gently fluff the inside of the potato with a fork, then add a heaping tablespoon of Greek yogurt into each potato, mixing slightly to combine.

Step 9

Top each potato with the turkey bacon pieces, chopped green onions, shredded reduced-fat cheddar cheese, freshly ground black pepper, garlic powder, and paprika.

Step 10

Return the potatoes to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 11

Remove from the oven, garnish with chopped fresh parsley if desired, and serve immediately.
