  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 2 garlic cloves, minced
  • 6 cups vegetable broth, low-sodium
  • 1 bay leaf
  • 1 teaspoon thyme, dried
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt, optional
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon red wine vinegar

Directions

Step 1

Rinse the lentils under cold water and check for any debris. Drain and set aside.

Step 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent.

Step 3

Add the diced carrots and celery to the pot and cook for another 5 minutes, stirring occasionally.

Step 4

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Add the rinsed lentils and pour in the vegetable broth. Stir to combine the ingredients.

Step 6

Drop in the bay leaf, thyme, and black pepper. Stir well, and bring the soup to a gentle boil.

Step 7

Once boiling, reduce the heat to low, cover, and let it simmer for 30 minutes or until the lentils are tender.

Step 8

Remove and discard the bay leaf. Taste and add salt if necessary, considering dietary requirements.

Step 9

Stir in the red wine vinegar and adjust the seasoning to preference.

Step 10
