  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon salt

Directions

Step 1

Rinse the lentils under cold water and drain well.

In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil over medium-high heat.
