  • 500 grams Lean beef shank
  • 6 cups Low-sodium beef broth

  • 1 Cinnamon stick
  • 1 teaspoon Salt
  • 2 tablespoons Low-sodium soy sauce
  • 300 grams Whole wheat noodles
  • 2 Bok choy, halved
  • 1 Carrot, julienned
  • 2 teaspoons Chili oil (optional)
  • 0.25 cup Fresh cilantro, chopped
  • 2 Green onions, sliced

Directions

Step 1

Rinse the lean beef shank under cold water and pat dry. Trim off any visible fat and slice it into 1-inch pieces.

Step 2

Place the beef in a large pot or Dutch oven and add the low-sodium beef broth and water. Bring to a boil over medium-high heat.

Step 3

As the liquid begins to boil, skim off any foam that surfaces, ensuring a clear broth.

Add the sliced onion, minced garlic, ginger slices, star anise, and cinnamon stick to the pot. Reduce the heat to low, cover, and simmer for 2.5 hours until the beef is tender.
