Ingredients

  • 500 grams lean ground lamb
  • 50 grams whole wheat breadcrumbs
  • 1 medium red onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 20 grams fresh parsley, finely chopped
  • 20 grams fresh mint leaves, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 1 teaspoon lemon zest
  • 2 tablespoons extra-virgin olive oil
  • 200 grams low-fat Greek yogurt (for serving)
  • 1 medium cucumber, thinly sliced (for serving)

Directions

Step 1

In a large mixing bowl, combine the lean ground lamb, whole wheat breadcrumbs, chopped red onion, minced garlic, parsley, mint, ground cumin, ground coriander, ground cinnamon, black pepper, salt, and lemon zest.

Step 2

Mix the ingredients thoroughly with your hands until they are well combined.

Step 3

Divide the mixture into 8 equal portions and shape each portion into a long, thin sausage around a metal or wooden skewer (if using wooden skewers, soak them in water for 15 minutes beforehand to prevent burning).

Step 4

Brush the koftas lightly with extra-virgin olive oil to prevent sticking.

Step 5

Preheat a grill or a grill pan to medium-high heat.

Step 6

Place the koftas on the grill and cook for about 12-15 minutes, turning occasionally, until they are browned on all sides and cooked through.

Step 7

Serve the lamb koftas hot with low-fat Greek yogurt and thinly sliced cucumber on the side.
