Ingredients

  • 500 grams Ground chicken breast
  • 0.5 cups Rolled oats
  • 1 large Egg
  • 1 medium, grated Carrot
  • 0.5 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 0.25 cups, finely chopped Fresh parsley
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 as needed for greasing Olive oil spray

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground chicken breast and rolled oats, mixing well to incorporate.

Step 3

Add in the grated carrot, finely chopped onion, and minced garlic, stirring to combine.

Step 4

Crack the egg into the mixture and add the finely chopped parsley, ground cumin, ground coriander, paprika, salt, and black pepper. Mix everything together until evenly distributed.

With clean hands, shape the mixture into small patties, about the size of your palm, and place them onto the prepared baking sheet. You should be able to make about 8-10 patties, depending on your preferred size.

Step 6

Lightly spray the top of the patties with olive oil spray to help them brown in the oven.

Step 7

Bake the patties in the preheated oven for 18-20 minutes or until they are cooked through and lightly browned on top.

Step 8

Once cooked, remove from the oven and let cool slightly before serving.

Step 9

Serve these heart-healthy chicken patties with a side of fresh salad or whole-grain pita for a complete meal.
