Ingredients

  • 500 grams fresh firm white fish (like mahi-mahi or tilapia)
  • 120 ml coconut vinegar
  • 120 ml coconut milk
  • 1 medium red onion, finely sliced
  • 30 grams ginger, peeled and finely chopped
  • 30 grams cilantro, roughly chopped
  • 1 piece birds eye chili, finely sliced
  • 1 medium cucumber, deseeded and diced
  • 1 medium red bell pepper, diced
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 60 ml fresh calamansi juice (or substitute with lime juice)

Directions

Step 1

Start by thoroughly cleaning the fish. Skin, debone, and cut it into small bite-sized cubes (around 1/2 inch).

Step 2

Place the fish cubes in a bowl and add the coconut vinegar. Stir gently to coat the fish evenly. Cover the bowl and refrigerate for 15 minutes to allow the vinegar to 'cook' the fish and infuse it with flavor.

Step 3

After 15 minutes, drain any excess vinegar from the fish, leaving just a little to keep it moist. Add the coconut milk to the bowl with the marinated fish.

Step 4

Mix in the red onion, ginger, cilantro, birds eye chili, cucumber, and red bell pepper. Stir gently to combine all the ingredients.

Step 5

Season with sea salt and black pepper. Add the calamansi juice, stirring lightly again.

Step 6

Return the mixture to the refrigerator for an additional 15 minutes to allow the flavors to meld.

Step 7

Taste and adjust seasoning if necessary before serving. Serve the Kinilaw na Isda chilled as an appetizer or a main dish, garnished with additional cilantro if desired.
