  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Ground turmeric
  • 1 teaspoon Dried oregano
  • 1 cup Cherry tomatoes
  • 2 Bell peppers, assorted colors, cut into 1-inch pieces
  • 1 Red onion, cut into wedges
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Cut the chicken breast into 1-inch cubes.

Step 2

In a large bowl, combine olive oil, lemon juice, minced garlic, cumin, coriander, paprika, black pepper, turmeric, and oregano. Mix well to create the marinade.

Add the chicken cubes to the marinade and toss to coat thoroughly. Cover the bowl and refrigerate for at least 30 minutes, up to 4 hours for best results.
