Ingredients

  • 4 cups Kale leaves
  • 2 cups Red cabbage
  • 1 large Carrot
  • 1 medium Red bell pepper
  • 3 stalks Green onions
  • 0.5 cup Fresh parsley
  • 0.5 cup Sunflower seeds
  • 2 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the kale leaves under cold water and pat dry. Remove the tough stems and slice the leaves into thin strips.

Thinly slice the red cabbage and place it in a large salad bowl along with the kale.

Peel the carrot and shred it using a grater. Add the shredded carrot to the bowl.
