Ingredients

  • 2 cups Whole wheat pastry flour
  • 4 tablespoons Unsalted butter, cold and cubed
  • 2 tablespoons Olive oil
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 0.5 cup Ice cold water
  • 1 pound Lean ground beef (95% lean)
  • 1 medium Onion, finely chopped
  • 2 units Garlic cloves, minced
  • 1 unit Scotch bonnet pepper, deseeded and minced
  • 3 stalks Green onions, chopped
  • 1 teaspoon Ground allspice
  • 1 teaspoon Thyme leaves, chopped
  • 0.5 teaspoon Black pepper
  • 0.5 cup Low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 0.25 cup Breadcrumbs, whole wheat
  • 1 unit Egg, beaten (for egg wash)

Directions

Step 1

In a large bowl, combine whole wheat pastry flour, turmeric, and salt. Add cold cubed unsalted butter and 1 tablespoon of olive oil.

Step 2

Using a pastry cutter or fork, mix until the butter is incorporated and the mixture resembles coarse crumbs.

Step 3

Slowly add ice-cold water, a tablespoon at a time, mixing until a dough forms. Knead gently, then shape into a disc, wrap in plastic, and chill in the refrigerator for at least 30 minutes.

Step 4

In a large skillet over medium heat, warm the remaining tablespoon of olive oil. Add the chopped onion, minced garlic, and minced Scotch bonnet pepper. Sauté until the onion is translucent, about 5 minutes.

Step 5

Add the lean ground beef to the skillet, breaking it up with a spoon, and cook until it’s browned evenly.

Step 6

Stir in the green onions, ground allspice, thyme, and black pepper. Cook for an additional 2 minutes.

Step 7

Add the low-sodium beef broth and Worcestershire sauce, simmering until the liquid is mostly reduced. Mix in whole wheat breadcrumbs and remove from heat.

Step 8

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 9

On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Using a round cutter or a bowl, cut out circles of about 6 inches in diameter.

Step 10

Place a heaping tablespoon of the beef mixture onto one side of each dough circle. Fold the other half over to enclose the filling, and crimp the edges with a fork to seal.

Step 11

Transfer each patty to the prepared baking sheet and lightly brush with beaten egg to create a golden finish.

Step 12

Bake in the preheated oven for 20-25 minutes or until the patties are golden brown and flaky. Allow them to cool slightly before serving.
